Sub-Rosa Summer

Today on the cusp of May, I am dreaming of two summers ago when I was able to see friends freely and sip cocktails in the warm weather and am hoping we can begin a return to normal soon. In the meantime, I will settle for the quintessential garden cocktail and punch it up a little bit. Its a wonderful take on the Pimm’s No. 1. This was taken from the Downton Abbey Cocktail book and oh boy, does this take a Pimm’s No. 1 to a new level.

This cocktail has ginger beer which provides the much needed snap to balance out the sweetness of Pimm’s for anyone that finds a Pimm’s Cup a little too sweet for their liking. It has a bite from the ginger and the bitters add the perfect balance.

Sub-Rosa Summer

2 parts Pimm’s No. 1
4 part Ginger Beer
Ribbon of Cucumber and Orange wheel for garnish
2 Dashes Orange Bitters

Combine all ingredients over ice in a Collins glass, stir and garnish.
